Javi opened his butcher's shop, La Carniceria de Javi, in 2012, in the Huerta Del Rey district, close to the beaches and the town center.
But he didn't get there by chance! His passion for butchery has been passed down from generation to generation. His grandfather already ran a butcher's shop in Facinas in the 1960s, and then his father took over at the Tarifa market. Even back then, Javi was his best assistant!
Today, he continues the family tradition with his own business.
If you've ever visited Andalusia, you're probably familiar with the native breed of cattle known as Retinta.
It is comparable to the Limousin and Charolais breeds in France. Retinta is a fusion of three breeds: Colorada Extremeña, Retinta Andaluza and Rubia Andaluza.
This breed is renowned for its dual aptitude for work and meat. Mainly bred in Extremadura and western Andalusia, it is present in 25 provinces, but only 15 have breeding stock, including Cadiz, Seville, Badajoz and Cáceres.
It's in Cáceres that our friend Javi gets his supplies of quality meat.
At La Carniceria de Javi, you'll find not only Retinta meat, but also Iberian pork, poultry and tasty derivatives such as chorizo and other criollos, whose typical seasoning makes for a particularly delicious sausage!
